This cocktail is named after the Halekulani Hotel in Waikiki where it was invented sometime in the 1930s. Unlike almost all other Tiki drinks, the Halekulani contains no rum - strictly a high-proof Bourbon is used! And it tends to be served up!

The Halekulani

  • 1-1/2 oz. Bourbon (High-proof)

  • 1/2 oz. Pineapple juice

  • 1/2 oz. Orange juice

  • 1/2 oz. Lemon juice

  • 1/2 oz. Demerara syrup

  • 1 barspoon Real Grenadine

  • 1 dash Angostura bitters

Method...

Put all ingredients in a shaker tin with ice. Shake well and fine strain into a chilled coupe glass. Garnish with a dehydrated pineapple and a cherry.
