I created this cocktail in 2023, inspired by pictures of the sunsets in Roatan, where they also happen to make great rum. It is spicy, herbal, tart, sweet, and delicious! And the bright red color against the white sugared rim is stunning, especially at sunset!

Roatan Sunset

  • 1-1/2 oz. Roatan Spiced Rum

  • 3/4 oz. Elderflower liqueur

  • 3/4 oz. Aperol

  • 1 oz. Ruby Red Grapefruit juice

  • 3/4 oz. Lemon juice

  • 1/8 oz. Simple syrup

  • 2-3 dashes Angostura bitters

Method...

Add all ingredients to a shaker tin. Add ice and shake until chilled. Fine strain into a chilled coupe glass. Garnish with a sugared rim, dehydrated pineapple flower and a lemon wheel.

I have found that the Roatan Sunset cocktail also works well over ice in a tall glass!
