This is just a stunning cocktail! The shaken pineapple juice makes a naturally creamy white top. But be careful, you will not be able to stop drinking these! They are sweet and tart, and oh-so refreshing!

Pineapple Aperol Daiquiri

  • 1-1/2 oz. Aged Rum

  • 1 oz. Aperol

  • 1/2 oz. Pineapple juice

  • 1/2 oz. Lime juice

  • 1/4 oz. Simple syrup

Method...

Add the ingredients to a cocktail shaker. Fill it with ice and shake until cold. Fine strain into a chilled coupe glass. Garnish with 2 pineapple fronds and a dried blood orange wheel.

This recipe originally called for less Aperol and more pineapple juice and simple syrup, which I found to be too sweet. This is a more refreshing, Aperol-forward cocktail.
