The Clover Club, named after a men's group that regularly met in a Philadelphia hotel was a popular turn of the century cocktail, and people went crazy for it, including well-to-do gentlemen and "captains of industry."

Clover Club

  • 1-1/2 oz. Gin

  • 1/2 oz. Dry Vermouth

  • 1/2 oz. Lemon juice

  • 1 Egg white

  • 8 Raspberries (5 muddled)

  • 1/4 oz. Simple syrup

Method...

In a shaker tin, muddle the raspberries, then add the rest of the ingredients. Dry-shake for 15 seconds, then wet-shake. Fine strain into a chilled coupe glass. Garnish with 3 or 4 skewered raspberries.

Sadly, this drink quickly went out of style. Not because it was bad, this is a fantastic cocktail. I think more so because of the extra work needed to make it, and because it was not seen as a manly looking drink!
